Sliced layer cake looks so elegant, so why hide it with mounds of frosting? “People tend to love naked cakes because they don’t have a lot of icing and are not too sweet,” says Lissette Carlson, owner of Alameda, California-based Dolled-Up Cakes. “It’s a rustic look that’s elegant.”
Lose the fondant
Today’s cake designs have a more textured look to them than fondant towers of yesteryear. Carlson puts her own spin on traditional fondant by mixing it with gum paste to create cakes that look like they’re draped in ruffles and covered with realistic sugar flowers. “It really just brings out the whole design,” Carlson says.
Bring on the shine
Metallic cakes are stealing the spotlight. Your cake can shimmer in golds and silvers If you’re not the solid gold type, Carlson recommends using metallic accents on a solid black or white cake and adding a pop of color with a flower or sugar flower.

Your wedding is all about the story of you as a couple, so why not let your dessert do some of the talking? Take a traditional flavor and turn it on its head with an element of you. Stacey Sunday, owner of Cake on Sunday explains how. “I recently did a chocolate cake for a couple who loves Jameson. So what kind of buttercream did we do? Yep, Jameson!”
Embrace what makes you both unique, Sunday says. “If you are a whiskey-drinking couple, don’t be afraid to find a way to bring that element to your cake. Did you first meet each other on a coffee date? Let your cake tell part of a story.”
